it's fall and you know what that means...

SOUP TIME! so i stole this recipe from my friend holly and it was great. and really easy. it also makes a laaaaaarge amount. luckily my husband and his father LOVED it, so we actually went through it pretty quickly. I love fall for the reason of eating really yummy soups and chili. so without further ado...

You Need:
  • 1 Rotisserie Chicken
  • 2 Large cans of Chicken Broth
  • 3 Potatoes
  • 3 Carrots
  • 1 Medium can of Tomato Sauce
  • 1 Large can of Diced Tomatoes (undrained)
  • 1 Bag Lima Beans
  • 1 Regular can of White Corn (drained)
  • Salt
  • Pepper
  • Parsley
To Do:
  • Cut and Peel 3 Potatoes
  • Cut and Peel 3 Carrots
  • Bone Rotisserie Chicken
  • Boil Potatoes in Chicken Broth until soft
  • Once Potates are soft, add chicken, carrots, tomato sauce, diced tomatoes, lima beans and white corn
  • Heat/Simmer and add salt, pepper and parsley to taste
Some Notes:
  • Instead of rotisserie chicken you can boil 3 chicken breasts. Let's be honest though, rotisserie chicken is way easier! I also like that it's already seasoned
  • You can chop 1/2 a bag of mini carrots instead of using 3 large carrots
  • Instead of Lima Beans, you can use Butter Beans (i just couldn't find any)
  • You can also season to taste with season all and celery flakes (i didn't have these)
  • The reason this recipe is so great too is that you can play around with different veggies/beans and it'll still be great!
Serve with some bread and you've got a great fall meal!

  1. My mom makes this, it is So good! She throws in whatever veggies she has around and it always tastes great. Can't wait to see new house pics!!
