
i love mexican food, and tacos...but this taco salad was simply the best i have ever had. i looked up a couple recipes and then ended up just kind of making my own version of them. Enjoy:
You Need:
- 1 lb ground beef
- 1/2 onion
- 1 can diced tomatoes (drained)
- 1 package of taco seasoning
- 1 bottle of Sweet Honey Catalina dressing
- 1 can of refried beans
- 1 bag tortilla chips
- Mexican cheese mixture (or just cheddar cheese)
- Lettuce
- Sour cream
- Salsa
To Do:
- Brown meat over medium high heat
- Chop and add onion to meat while browning
- Once brown stir in taco seasoning packet and can of drained diced tomatoes
- Pour in about 2/3 bottle of Catalina dressing
- Stir, mixing all ingredients, let simmer for about 15 minutes
- Crumble chips and top with meat mixture, refried beans, chopped lettuce, cheese, salsa, and sour cream
Easy and done. it was seriously so good. i guess it's the Catalina dressing that really made it amazing. i shouldn't have made it the night before i am meeting friends at chipotle - i will only be disappointed.
