more cooking has been going on around here. so i thought i'd share some of the recent favorites:
Mexican Chicken and Corn Casserole

The Corn Casserole recipe can be found here. It's a Paula Dean...so it's amazing...and not by any means good for you.
I made up the Mexican Chicken...
You Need:
- 4 chicken breasts
- 1/2 - 2/3 jar of salsa (i used chichis mild)
- 1 -2 cups sliced mushrooms
- Taco seasoning
- Mexican cheese mix
- Cooking spray
To Do:
- Preheat oven to 400 Degrees; spray 9X13 pan with cooking spray
- Sprinkle chicken breasts with taco seasoning
- Pour salsa over tops of chicken covering as much as possible
- Toss mushrooms over salsa/chicken/throughout the pan (again we LOVE tons of mushrooms here at the wiegold household)
- Sprinkle cheese over top
- Cook for about 25-30 min, or until chicken is cooked through
Some Notes:
- I didn't really measure any of the above stuff when I made it, so any above measurements are guesses... just go with your gut :)
- I just used the pre-shredded "mexican cheese" mix, but you could use a variety of course
BBQ Chicken Sandwiches (Crock pot Style)

You Need:
- 3 frozen chicken breasts
- 1 Bottle BBQ sauce
- 1/4 cup of brown sugar
- 1/2 cup vinegar
- 1/2 tsp garlic powder
To Do:
- Mix BBQ sauce, brown sugar, vinegar, and garlic powder in bowl
- Place frozen chicken breasts in crock pot, cover with sauce
- Cook on low for 5.5 hours, shredding chicken in last 30 minutes
