i might regret making these

because they were SO GOOD.... and now, Joey wants them ALL THE TIME. But they aren't a "quick meal". They take time, and when Ben is fussing away, it's even harder.

Nevertheless, i thought i'd share because Joey did say it was great. Actually to quote: "the best Mexican I've ever had. And that's saying a lot because David and I ate at a lot of Mexican restaurants, especially On the Boarder". So while this did take awhile, and i hate corn tortillas because they break like it's their job... it was worth it after that comment.

i didn't take any pictures of my meal (probably because I was so tired after making it)... but this is the recipe with step by step instructions, so even better.
